This is one of my most requested recipes, so it’s about time I get it up on the blog! All energy balls seem to follow the same kind of structure, but after trying and testing a bajillion of them, I landed on our family’s ultimate favourite. They are jam packed full of power foods, and they are perfect in ball form, or in bar form, especially in the Snack Bar Maker [this recipe makes a good portion, so I usually make half in the snack bar maker, and half as balls, then everyone can choose their power form!].
Ingredients:
- 1 1/3 cup organic rolled oats
- 2 cup natural nut butter (1 cup almond butter & 1 cup peanut butter)
- 1/2 cup raw honey
- 2 tsp. vanilla
- 2/3 cup unsweetened coconut
- 4 tbsp. chia seeds
- 2/3 cup mini chocolate chips
Directions:
- Mix all the delicious ingredients together. It’s easiest to use your hands!
- Roll into balls, or smash down into a snack bar maker. Using wet hands smooths out this process.
- Store in the fridge for about an hour before serving (if you can handle waiting). Keep in the fridge (or freezer) for safe keeping after.
P.S. all nut butters work great – often I’ll add some cashew butter in there too. You can really do any combo that adds up to the 2 cup amount. If you go full peanut butter, I find these veryyy gooey, which although delicious, serves better from frozen!
