Avocado. The super food that I oh so love! If I was on a deserted island and was only able to eat one food forever, it would be THE avocado. Okay, I’m getting to be a little much here, but seriously, avocado goes with EVERYTHING!

6 Ways to Enjoy Avocados

I’ve recently had people ask me about my favourite ways to eat avocados, so I thought I would share some simple, easy (sounds nice, right?) recipes with you.

It is best not to assume everyone knows how to cut an avocado, so here is the mundane part. I prefer to wash the avocado first, since so many lovely, but likely not clean hands, have been picking them up at the grocery store. Then, cut the avocado in half length-wise. If it’s the proper amount of ripeness, it will twist right off. (Tip: If you choose to store some of the avocado for later, keep the pit in the part you’re storing and it will stay fresh and green for longer!) Then, scoop out, cut out, squeeze out, make the avocado any shape you so desire for your delicious creations!

6 Ways to Enjoy an Avocado

1. In Salads

Nice and easy. Cut into cubes or long strips and add it to any salad. Whether it’s a simple salad with just lettuce, tomatoes, and avocado, or if you want to fancy it up with strawberries, oranges, and figs, avocado will always be a tasty accent!

2. In Tacos

For turkey tacos, beef tacos, fish tacos, I love to top mine with avocado, or mash it up at the base of the taco shell.

3. On Eggs

For a Mexican-style breakfast, top your eggs (any style) with avocado and salsa.

4. As a Mayo Replacement

I’m not a mayo fan, so I find mashed-up avocado to be a great replacement. I mix it in with my tuna salads or my egg salads. Put it in a sandwich, a wrap, or just eat it straight out of the bowl!

5. Avocado Rice Cake

Avocado Toast is all the rage right now, but I’m a fan of the Avocado Rice Cake. You can get a flavoured rice cake if you prefer. I recently bought Tomato & Basil Rice Cakes. I topped with half an avocado, some hot sauce, and Cheyenne peppers.

6. By Itself

One of my favourite ways to enjoy an avocado…Cut it in half, top with hot sauce, take a spoon, and eat it just like that.

Throwback to little C starting solids at about the Throwback to little C starting solids at about the same age D is now. 

With D coming up on starting solids, I’m going down memory lane. My midwife said something that gave me all the feels…how incredible it is that every cell of little Deacon has come from me, from growing him to nourishing him with my milk. Knowing he’s going to start being nourished with other food makes me want to pause time, but also…I love this food journey, as you know…since it brought me #collinskitchencookbook and I think it may be even more fun this time around since Collins is already planning out Deacon’s menu!!

Is there anything you want me to talk about baby-led weaning wise as we go about our food journey?! And if not, just tell me what food you think D should try ASAP!!

If you asked Jordan his biggest pet peeve about me, he would say that I never know where my keys or phone are when we are leaving the house. [And yes, I know there are a thousand good ways to solve this problem, but yet here we are…]

I would guess that his runner up is when I’m driving, I will take the way that takes longer if I like the route better…💁‍♀️

It’s only chaos, because of how you experience i It’s only chaos, because of how you experience it. That’s my Conscious Parenting two cents for the day!! Next time you’re feeling overwhelm, say that to yourself… “It’s only chaos, because of how I’m experiencing it.”
