I’m very much a meat eater, but sometimes there’s just something about a fresh veggie-filled sandwich, especially if it’s accompanied by a bowl of soup!
Here’s what ya gotta do:
Step 1: Toast two slices of your favourite bread
Step 2: Spread your favourite hummus on one piece of toast
Step 3: Smash about half an avocado on the other piece of toast
Step 4: Slice cooked beets and cucumber
Step 5: Top one side of toast with cooked beets, cucumber and fermented red cabbage (or caramelized onions)
Step 6: Close up that sandwich, and dig in!
